Buffalo Cauliflower Bowls with Dandy® Celery

If you've followed me for a while, you know I'm a big believer that healthy meals don't have to be boring or complicated.

In fact, some of my favorite recipes are inspired by classic comfort foods and restaurant flavors, but built around whole-food ingredients that help you feel your best.

These Buffalo Cauliflower Bowls are the perfect example.

They combine spicy buffalo cauliflower, roasted sweet potatoes, crisp Dandy® Celery, creamy avocado, mixed greens, and protein for a meal that's satisfying, flavorful, and balanced. The combination of fiber, protein, healthy fats, and complex carbohydrates helps support stable energy levels while keeping you full for hours.

And of course, no buffalo-inspired meal would be complete without celery.

I love using Dandy® Celery because it adds the perfect crunch and freshness to balance the heat of the buffalo sauce. It's also an easy way to add more vegetables and fiber to your day.

Buffalo Cauliflower Bowls

Ingredients

For the Bowls

  • 1 head cauliflower, cut into florets

  • 1 medium sweet potato, diced into small cubes

  • 1 tbsp avocado oil

  • ½ tsp garlic powder

  • ½ tsp paprika

  • Sea salt and pepper, to taste

  • ⅓ cup buffalo sauce

  • 2–3 stalks Dandy® Celery, sliced

  • 4 cups mixed greens

  • 1 avocado, sliced

  • 2 grilled chicken breasts, sliced (or protein of choice)

For the Dressing

  • ½ cup plain Greek yogurt

  • Juice of ½ lemon

  • 1 garlic clove, minced

  • 1 tbsp fresh dill or parsley, chopped

  • Sea salt and pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C).

  2. In a large bowl, toss the cauliflower florets and sweet potato cubes with avocado oil, garlic powder, paprika, salt, and pepper.

  3. Spread onto a baking sheet and roast for 25–30 minutes, or until golden and tender.

  4. Remove from the oven and toss the cauliflower with buffalo sauce. Return the cauliflower to the oven for 5 additional minutes.

  5. While the vegetables are roasting, whisk together all dressing ingredients in a small bowl.

  6. Assemble the bowls by dividing the mixed greens among serving bowls. Top with buffalo cauliflower, roasted sweet potatoes, sliced Dandy® Celery, avocado, and grilled chicken.

  7. Drizzle with the Greek yogurt dressing and serve immediately.
